What is Specialty Coffee? Both the SCAA (Specialty Coffee Association of America) and Wikipedia trace the term “Specialty Coffee” originated from Erna Knutsen of Knudsen Coffee Ltd. back in 1974. The rating of specialty coffees must be between 80 – 100 point cupping score by a qualified industry expert in order to be awarded the title of a “specialty” grade of coffee. “Specialty Coffee” starts from arabica coffee. From the long process of its initial growth to the end product to you, this coffee has to pass rigorous industry standards in order to reach consumers with this designation. The following are basic standards:
1. Be planted in a micro-climate conducive for quality soil, temperature, altitude and weather conditions.
2. Receive the appropriate plant husbandry to optimize the coffee plants harvest potential.
3. The coffee cherries must be harvested at the peak of ripeness.
4. Coffee must be carefully monitored through the processes of pulping and not damaged.
5. When sorted properly must be free of all primary defects.
6. Must be dried appropriately, not too most and not over-dried according to standards.
7. Storage, packaging and shipping. Coffee should be kept cool dry so as not to mildew and not stored too long (baggy taste can occur).
8. The roaster should have correct industry color coding (Agtron ,Photovolt or similar)
9. Packed properly after cooling and degassing.
10. If ground, set to the appropriate grind size for the brewing application (drip, espresso, perk).
