The Supremo bean is named this because of its size and is an arabica, the better tasting and better selling genius of the coffee plant species. It is also the largest of the bean size picked off the tree. A tree may only yield about a pound per year. Both the Supremo and Excelso (smaller coffee bean) come off the same tree.
Here is some of the processing with Colombian coffee. After picking the fruit pulp is stripped off, and the beans have a slimy mucilage layer common in many plants. The mucilage is soaked off through fermentation in large tanks. They are then washed in clean water and dried in the sun on large patio's and graded. Coffee is separated similar to panning gold. There are screens there are specific screen sizes that determine the grade. The larger good beans are separated ans called “Supremo” the bean in Colombia. The smaller good beans are Excelso beans. Coffee is sifted on the screen, leaving the desired size to be picked through. Coffee size standards which can vary from country to country. Other quality standards have to do with the altitude the coffee is grown at, bean “hardness”,the quality of plant husbandry, size, and the number of defects of the bean.
